The Greek DIONYSOS project (LIFE03 ENV/GR/000223) aimed to develop an economically feasible process for the integrated management of winemaking industry wastes. This manual presents the project's results, such as the production of natural organic fertilizer or the recovery of high added value natural polyphenols to be used for medicines, cosmetics and food supplements.
